A creative synergy between restaurant owner and two head chefs is always a good sign that a restaurant's cuisine will be well beyond expectations and, at Cortesses, a dynamic duo are clearly at the helm. A native of Ireland, owner Michael Smyth has a wealth of international restaurant experience. He began his training at the Savoy Hotel in London and his professional career has taken him to the Moana Surfrider Resort in Hawaii, the Fairmont Hotel in San Francisco, and for three years, he circumnavigated the globe aboard a P&O passenger liner based out of Australia. Before moving to St. Augustine, he owned The Aristocrat restaurant in Las Vegas, voted Best Gourmet Restaurant by readers of the Las Vegas Review-Journal for four years running.
Cortesses Bistro is Michael's gift to Saint Augustine, America's Oldest City. For over five years, he has created another one of his multi-award winning restaurants, and always entertaining flamingo room.
